Shallots on board a small ship, Bima Bay Port

One of Bima's most important agricultural products is bawang merah, or shallots, which many people don't realize is an essential ingredient in Indonesian cooking. Some say that the crisp, intensely-flavoured shallots from Bima are the best in Indonesia, or perhaps even the world. Pretty too.
